I just caught shark soak in milk before cooking to remove impurities such as urine?

I caught the shark in Destin, Florida last Saturday. He said the deck-hand that sharks urinate through their skin, and I soak the fillets in milk for an hour, then rinse, then marinate them before grilling them. It is cooked to the proper temp to kill all bacteria?

I would use milk soak. See, not the bacteria that is disposing of soaking in milk, is urea in shark meat that you are throwing away by soaking in milk. It tastes much better (less ammonia taste / smell) if you follow the advice of the deck hand. Another thing is: Sharks are carnivores (eat other fish). Carnivorous animals often "bioaccumulate" toxins that were in their prey (such as dioxins and heavy metals). But if you are someone who will eat only once or twice sharkmeat in your life then there is a big concern (accumilate you need for a large amount of toxin in time to affect you). However, if you are a pregnant woman (or a woman to have children) the best is to avoid eating sharkmeat (there are often unacceptably high mercury levels in sharkmeat). And, no, you can not cook Mercury / Metals / toxins in the flesh. Oh yeah ….. Technically, "urine is sterile. Sharks do not produce urine as we do but I thought there was going to shoot for the sake of curiosity. Cheers:)
